I have partnered with ALDI on this mail. As always, all thoughts and opinions are my own.

How has your calendar week been going friends?

I had my monthly girls dinner last night and we had a smashing time! Nosotros only had iii people (out of a total of 12 or so), which just goes to testify you how decorated this time of year is. But sometimes a smaller, more intimate grouping is dainty because nosotros got to really chat and catch up! ❤️

I've got some extra piece of work projects going on and then I'm hoping for a productive adjacent few days. And hopefully some fun this weekend to balance information technology off too! 🎉

Speaking of things to wait forward to… we've got the holidays coming upwards and I'm really feeling ready for it! And ready for ALL the food as well!

My mom made today's recipe, this shrimp martini appetizer, for me for the first time last Thanksgiving. We snacked on it while we were cooking the large meal and it was the perfect calorie-free seize with teeth!

I've been making this recipe since then every bit an easy — but fancy-seeming — titbit to share with friends.

In fact, I had some of my neighbor buddies over concluding week and served this up in some martini spectacles. 🍸

Nosotros're all moms of little ones and information technology's nice to do something a little special like this when we assemble!

And of grade I had some wine to get with information technology! (Did I mention nosotros are moms of fiddling ones? 😂)

It's great to kick back sometimes and get in some adult conversation while the kids entertain themselves. And I'm lucky to have some seriously fabled women but across the street. 💕

We're ever saying we demand to do information technology more often – make information technology a regular thing to just drop by each other'south houses and share a glass of wine and a chat. 🍷🥂

And if you want to take a lovely evening of entertaining, without all the stress that tin go with it, here are my easy ABC'south:

  1. Allow enough time. Shop ahead, choice up some great on-paw ingredients like several nice cheeses and a selection of crackers, pair with some nuts or olives and my easy shrimp cocktail recipe and bam – yous are set!
  2. Be prepared. Keep your house stocked with a variety of wines, have some beautiful cocktail napkins and a couple of get-to recipes that are easy to whip upwardly. You'll be party-fix anytime!
  3. Chill out! The hostess sets the tone and you want to be at ease so your guests are at ease. Don't stress about the firm not being perfect – I promise y'all are the only i that notices! Then kicking back, pick up your wine glass and simply savor the moment!

Notes on this easy shrimp martini appetizer:

  • I use the ALDI pre-cooked Sea Queen Shrimp Ring to make life easy, but you could also roast your own shrimp in the oven. I've included directions in the recipe bill of fare if you want to do it that way.
  • The crushed tomatoes help keep this the right consistency. Lycopersicon esculentum juice would be too much liquid, but you could try substituting the same amount of canned petite diced tomatoes (well drained) or maybe even some salsa in a compression. That could certainly kick it upwardly a notch!
  • You can control the heat of this recipe by removing the membranes and seeds of the jalapeño for less heat, or leaving some in for more than heat. The horseradish and hot sauce are optional but give it a keen kick!
  • I similar to add together red onion to mine but you tin leave it out if you prefer.
  • These are fun served individually in martini spectacles only y'all tin can besides serve it up in a bowl with some fries for a group dip.

P.Southward. Honey easy appetizers for entertaining? Yeah, me too. Check out my easy microwave baked brie, holiday hummus and baked southwestern egg rolls. 👍

Also, I'll be posting just on Tuesday side by side calendar week, due to the Thanksgiving holiday.

Prep Time 10 minutes

Total Time ten minutes

Ingredients

  • ane lb. cooked shrimp, tails removed and roughly chopped
  • 2/iii cup canned crushed tomatoes (encounter notes)
  • one jalapeno, minced (remove membranes and seeds for less rut)
  • i/3 cup chopped fresh cilantro, finely chopped
  • 1/4 cup cerise onion, finely diced (optional)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon prepared horseradish (optional)
  • Bounding main salt and black pepper, to taste
  • Hot sauce, to gustatory modality (optional)

For serving:

  • Tortilla chips, pita fries and/or lettuce spears

Instructions

  1. Combine all ingredients and season well with table salt and pepper, to gustatory modality.
  2. Cover and air-condition until prepare to serve. This is all-time in the first 24 hours only will continue for up to 2 days in the refrigerator.

Notes

I utilise pre-cooked cocktail shrimp to make life like shooting fish in a barrel, but y'all could also roast your own shrimp in the oven. Merely flavour raw shrimp with olive oil, salt and pepper and roast at 400 for 6-viii minutes, until almost cooked through. Let absurd, remove tails and coarsely chop the shrimp. Then keep with the recipe.

The crushed tomatoes help go on this the right consistency. Lycopersicon esculentum juice would be too much liquid just you lot could try substituting the same amount of canned petite diced tomatoes (well drained) or peradventure even some salsa in a pinch. You can employ a slotted spoon to strain out whatsoever extra liquid when you go to serve this.

You tin command the oestrus of this recipe but removing the membranes and seeds of the jalapeño for less heat, or leaving some in for more than heat. The horseradish and hot sauce are optional just give information technology a cracking kicking!

I like to add crimson onion to mine just you can leave it out if you adopt.

These are fun served individual mode in martini glasses but you can too serve information technology upwards in a basin with some chips for a group dip at a party.
